Fun Food Ideas for a Roadtrip

One of these things that may be left until the last minute is food; which is why we are here today to talk about some simple roadtrip foods you can make to help keep you ticking on destination after destination.
Sandwiches
Sandwiches are probably the most obvious idea for a roadtrip food because they can be easily held and eaten, and only need a cooling bag to keep fresh while you are on the road. There are some great sandwich ideas but here we have 2 that are ideal for your trip:Ham and mustard sandwich
Ingredients:200g thick-sliced gammon
Dijon mustard
French baguette
Butter
To assemble this sandwich, slice your baguette in half and spread both sides with butter. Add ham to the bottom and then spread dijon mustard on the top slice. Press and cut into smaller sandwiches.
Leerdammer and tomato baguette
Ingredients:French baguette
8 slices leerdammer cheese
1 beef tomato
Spinach
Butter
To assemble, slice your baguette in half and spread both sides with butter. Add your spinach, then leerdammer, then thin slices of tomato. Top and cut into smaller sandwiches.
Pesto pasta salad
This recipe is one for when you stop off at a beauty spot and it will fill you up with slow release energy as well as provide a fresh meal for the day.Ingredients:
400g fusilli pasta
250g parmesan cheese
1 bunch basil
2 tbsp pine nuts
2 tbsp olive oil
8-10 cherry tomatoes
8 asparagus spears
1 clove garlic
- Slice tomatoes in half and slice asparagus diagonally into chunks.
- In a pan of boiling water, add your pasta and cook until 1 minute away from aldente. At this point, add your asparagus for the last minute before draining.
- Add your basil, garlic and pine nuts to a blender and blend. Add 2 tbsp of your parmesan and olive oil and blend until creamy and smooth.
- In a bowl, mix all of your ingredients together. Keep in an airtightt container for up to 1 week.
Rocky Road Bars
For a sweet treat on the road there is nothing easier and more fitting than rocky road. This recipe is so simple and so delicious!Ingredients:
200g dark chocolate10g butter
50g marshmallows
50g digestive biscuits
50g shortbread
Assorted nuts (optional)
- Melt the chocolate with butter in a bowl over a pan of water, or in short bursts in the microwave.
- Crush biscuits and chop up nuts (if using) into thick pieces. Add into the bowl with melted chocolate along with marshmallows.
- Pour into a greased baking dish and chill until set. Cut into pieces.
