Healthy Vegan Matcha Ice Cream Recipe

I love making easy snacks and meals with my toddler, and we've been experimenting with lots of "nice cream" combinations this summer! Frozen bananas are definitely a hot commodity in our household, especially during warm weather. It's also really fun to freeze our nice cream in popsicle molds for an easy, ready-to-grab, portioned dessert.

HEALTHY VEGAN MATCHA ICE CREAM RECIPE

  • Prep time: 5 minutes
  • Freezing time: 3 hours
  • Total time: 3 hours, 5 minutes
  • Servings: 4

Ingredients

  • 3 frozen bananas 
  • 1/4 cup oat milk, coconut milk, or milk of choice
  • 1 Tbsp matcha powder (consider using decaf matcha powder for kids)
  • Optional: 1 tsp vanilla extract 
  • Optional: 2-3 tsp (or Tbsp if you want it sweet!) maple syrup, or sweetener of choice

Supplies

Directions

  1. In a blender, add frozen bananas, milk, and matcha powder. 
  2. Blend until smooth and creamy. 
  3. Do a taste test. If desired, add vanilla extract and/or sweetener, then blend again. 
  4. Serve immediately for a soft serve texture. For an ice cream texture, store in a freezer-safe container (or pour into ice cream molds) and place in freezer for 2-3 hours.
  5. Enjoy!
Note: If you want to make this into a foolproof ice cream consistency, use this recipe with the Ninja Creami! You won't be disappointed. We started doing it this way after getting the appliance it tastes even better now!
